Foustman's Salami is a family-owned business that specializes in creating unique styles and flavors of artisanal uncured dry salami. We are proud to carry forward the tradition of Italian salami-making in the San Francisco Bay Area.
Fun fact: San Francisco is known as the salami capital of the United States due to its cool and humid climate, which is ideal for dry curing meat. Italian immigrants brought their family's salami-making tradition to the Bay Area in the late 1800s, where they found the perfect conditions for creating their beloved salumi. These salami makers had to fight for the right to call their salami "Italian Salami" and protect their traditional curing methods.
Salami - The Old School Way
Our old-world style, Italian dry salami is created using traditional techniques. It is coated in an organic white mold as part of the dry-curing and preservative process. This harmless mold contributes to the unique flavor profile of our salami, similar to fine cheeses.
Pepperoni
Foustman's uncured pepperoni is made with a choice blend of pork and beef. The addition of paprika gives our pepperoni its characteristic color and adds depth to its flavor.
Shelf-Stable
Our salamis are shelf-stable and do not require refrigeration until after opening. This makes them perfect for camping, hiking, picnics, or traveling. The salamis are encased in a fibrous casing made from plant cellulose, which should be removed before eating.
Uncured Salami
Our Italian Dry Salami is naturally cured using traditional techniques passed down from the Old Country. Salumists in the San Francisco Bay Area have kept this tradition alive with passion and expertise.
